The cheapest would be in winter - which is approx from May to September - some places in SA do not really have a winter like Kwazulu Natal - so if you are going there then it does not really matter when you go but if you are going to the Cape or JHB - then the best time to go would be Feb and March which are after the tourist months but really good weather for beaches, safari and less crowds

The cheapest time is off peak, ie not in any of school holidays. So, don't go around Christmas/New Year or June time even if it is the winter it's the summer school holidays in other countries. I'd say go between Feb - May or Sep - Nov, no chance of school holidays between then except Easter but you just need to avoid a flight the week before and a week after Easter...

From the end of January to the end of April. Anywhere between those months. Our winter starts from the end of April to about the beginning or so of September. And to us its really really cold! Our best summer is from December to March. The in peak season is definately April as that is Easter Month and many go away to safaris or camping etc. Our prices dont really vary much so it doesnt make a difference. Im not sure about the air tickets and all that though. Hope you will like our wonderful country!

HAHA

As the answers allready mention AVOID WINTER & avoid the TOURIST season. WInter is COld - A EAT RIGHT THROUGH YOU COLD!!, & the tourist season everything is a rip off - more than usual *grin*, yes its cheap by Pound/Dollar standards but just becasue its a holiday season there is still no reason to rip the locals & tourists off..even if its the locals doing the ripping off..So for me January to end March are best..I also try to get there before the airfares go up in or about September.

Avoid December / January and July as these are the peak seasons. Yes, prices do go up, but not all over. It is a diverse country, so you would have to plan carefully what sort of holiday you are after - bush and animals, the beach, cities etc. If you go where the locals go, you won't be ripped of. I live in SA and can fully recommend it.
